Things I’m loving lately:

  1. Cold Brew Iced Coffee. I make a big batch following this recipe, and it gives me life in the mornings. Yes, even though it’s decaf. Shh.
  2. Living a 10 minute walk from the beach! This weekend we packed up and moved across the state, and while I’m already missing so much about western Mass (the farms! the mountains! the people! the chipmunks that lived in my backyard!), I’m slowly coming around to this new life situation.
  3. Watermelon + Lime + Salt. SO refreshing on a hot day.
  4. SMOOTHIE BOWLS.

Which brings us to today’s blog post. Chocolate Peanut Butter Smoothie Bowl

I’ve still barely unpacked my kitchen- don’t look in my spare bedroom or you’ll also notice I haven’t unpacked anything else, either- but you’d better believe I had Kevin dig out the blender the minute we arrived in our new apartment. 

The reason? Smoothie bowls. 

I used to be on the fence about smoothie bowls. I mean, I like drinking smoothies. Why complicate things by needing to eat a smoothie with a spoon?

Well, I’ll tell you why: because smoothie bowls are thick, creamy, and super cold. A.K.A. perfect for a summer morning. And you can cover them with toppings galore!

It starts with a frozen banana, a big handful of baby spinach- which, by the way, you can’t taste at all-cocoa powder, and peanut butter powder. I’m not usually a fan of peanut butter powder as a swap for regular peanut butter, but it works perfectly in this smoothie bowl. Regular peanut butter tends to stick to the sides of the blender and never actually mixes in with everything else; powdered peanut butter doesn’t have that problem, and fully dissolves in the smoothie to leave the entire thing tasting like a peanut butter cup.

The only other ingredients are cinnamon, vanilla, a tiny pinch of salt, and some protein powder, if you want it. If not, that’s cool too; you can totally leave it out and still end up with a tasty, satisfying breakfast/snack/dessert/whatever. 

Besides the whole melted ice cream factor, the other reason I love smoothie bowls so much is the endless opportunities for toppings. I’m talking about stuff like granola, nuts, seeds, chopped dark chocolate, fresh fruit, nut butters, and my current fav: chopped up Health Warrior Chia Bars. Holy yum. Chocolate Peanut Butter Smoothie Bowl

Chelsea Colbath
A thick, creamy smoothie bowl that tastes like a liquid peanut butter cup and is loaded with healthy ingredients!

Ingredients
  

  • 1 large banana frozen*
  • 1 large handful of baby spinach about 1 cup
  • 1 1/2 Tablespoons cocoa powder
  • 1 1/2 Tablespoons peanut butter powder can sub 2 T regular peanut butter, if needed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • a tiny pinch of salt
  • 1/4 cup water or milk of choice
  • optional: 2 Tablespoons protein powder of choice
  • toppings such as: granola nuts, seeds, chopped chocolate, fresh fruit, nut butters, etc

Instructions
 

  • 1. Put all ingredients into a blender, and blend on high until smooth, scraping down if needed. Pour into a bowl and serve immediately, with toppings of choice.

Notes

*The frozen banana gives this smoothie bowl its thick, creamy texture. Peel + freeze whole, ripe bananas in freezer bags to have them ready for smoothie bowls anytime!
