Today we’re making Coconut Matcha Energy Bites, made with just 7 ingredients and no fancy equipment; just a bowl and a spoon!

With summer weather rapidly approaching I find myself in need of more portable healthy snacks. More daylight and warmer weather means I want to spend every possible extra minute outside; I don’t want to just sit inside and eat when I could walk to the beach and eat, you know? Or hit up my favorite hiking trails, or go sit at the park, or find wild edibles in the woods, or explore a new state preservation, or, or, or…you get the point.

Long story short, I need ample snacks to keep me fueled for this endless adventure that is life. 

Sure, I may already have seven other energy ball recipes here on Baked Greens, but what’s one more? Really, we can’t just stop at 7. Plus, none of them have coconut butter in them and considering my daily spoonful of coconut butter habit of late, I’d say it’s about time coconut butter made it’s debut in an energy bite.

Coconut Matcha Bliss Balls

Paired with matcha the coconut butter takes on a bright green hue, and additions like vanilla and honey mimic my favorite matcha latte flavors. Hemp seeds add extra protein, fiber, and essential nutrients like iron and magnesium, and unsweetened shredded coconut helps give these energy bites a little extra texture.

Oh, and I forgot to mention the best part: the texture of these creamy little coconut matcha bites is dangerously close to that of a truffle.

Think rich, creamy, melt-in-your-mouth goodness.

Coconut Matcha Energy Bites

A quick + easy recipe made with coconut butter, hemp seeds, raw honey, and matcha! These energy bites make for the perfect afternoon pick-me up or on-the-go snack.

Ingredients
  1. 3/4 cup raw coconut butter
  2. 2 Tablespoons virgin coconut oil
  3. 2 Tablespoons raw honey
  4. 1 teaspoon matcha powder*
  5. 1 teaspoon vanilla extract
  6. 1/2 cup unsweetened shredded coconut**
  7. 1/4 cup raw hemp seeds (also called hemp hearts)**
Instructions
  1. 1. If your coconut butter and oil are both solid at room temperature: measure out coconut butter and coconut oil and place in a microwave-safe bowl; heat in 10 second intervals until just soft and stir-able, but not completely melted. Alternately, this can be done in a small saucepan on low heat on the stove. If your house is particularly warm, your coconut butter and coconut oil could both be drippy at room temperature. In this case, skip the warming step and just measure them into a bowl and proceed with the recipe.
  2. 2. Add all remaining ingredients to the bowl and stir well to fully combine. If too soft and runny to scoop, stick the bowl in your freezer for 5 minutes to firm up. Otherwise, use a small cookie scoop to portion out the energy bites.
  3. 3. Store in an airtight container for 5 days at room temperature, or up to 2 weeks in the fridge. I prefer the texture of these when they're at room temperature, since coconut oil and butter and both solid when chilled.
Notes
  1. *My favorite matcha is Kenko Tea's Organic Ceremonial Grade Matcha. I buy it on amazon for a reasonable price (about $25 for a tin, which seems like a lot of money, but it's extremely high quality matcha. A tin should yield about 30 servings of matcha, so it works out to be pretty affordable in the long run).
  2. **I like the crunch of shredded coconut and the nutrients from hemp seeds, so I add them both. A combined 3/4 cup of either could be used instead, if you don't have or don't want to buy both.
