Peanut Butter, Avocado & Basil Sandwich

A simple sandwich built with layers of crunchy peanut butter, honey, fresh herbs, avocado, and salt. Use gluten-free bread and vegan-friendly sweetener for a completely vegan, gluten-free, nutritious sandwich!

Ingredients
  

  • 2 slices bread of choice I used sprouted multigrain with sesame seeds*
  • 1-2 Tablespoons crunchy peanut butter**
  • 1 teaspoon honey
  • 1/2 a ripe avocado
  • a pinch of salt
  • 4-6 basil leaves or a combination of basil and mint

Instructions
 

  • 1. If you'd like a toasted sandwich, toast your bread. Otherwise, lay out bread slices on a plate, and begin layering on ingredients. One on side, spread peanut butter and drizzle it with honey. On the other slice of bread, mash the half an avocado with a fork and smoosh it into the bread. Sprinkle with salt, then add in fresh herbs. Close sandwich, and enjoy!
  • 2. If using frozen bread, pack sandwich in an airtight container, and refrigerate overnight, or until needed. You can also pack it straight into a backpack or lunchbag and the frozen bread will keep the sandwich cool as it defrosts.

Notes

*Use GF bread if needed. As mentioned, frozen bread works great for a pack-ahead lunch, but fresh bread is great too if that's all you have.
**The crunch is necessary here, as you also have creamy avocado. Depending on the size of your bread slices, you may need anywhere from 1-2 Tablespoons of peanut butter to cover the bread.
