Coconut Matcha Granola

This simple, vegan, gluten-free granola gets an earthy dose of green tea flavor from matcha. Coconut oil and coconut flakes both add rich flavor and texture to this granola!

- 2 cups oats
- 1 cup unsweetened coconut flakes
- 1 Tablespoon matcha
- 1 teaspoon ginger
- 1/3 cup maple syrup
- 1/3 cup virgin coconut oil melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
1. Preheat oven to 325 degrees Fahrenheit. Line a sheet pan with parchment paper, and set aside.
2. Combine all ingredients in a bowl, and stir to combine. Pour onto prepared pan, and bake for 25 minutes, or until golden brown. Do not stir.
3. Let granola cool completely, then use a spatula or your hands to break the granola up into clusters. Transfer to an airtight container, and store at room temperature for up to a week.
