Goat Cheese & Avocado Sandwich

A simple sandwich made with goat cheese, avocado, cucumber, and sprouts. Take it on picnics, to work, or even send it to school with your kids!
- sandwich bread
- herbed goat cheese
- avocado slices
- cucumber slices
- sprouts I used radish sprouts for a spicy bite, but use whatever you like, or even spinach or romaine
- salt + pepper
1. Toast bread, if desired. Spread each slice of bread with goat cheese, then add several slices of avocado and cucumber, and a handful of sprouts to one slice of bread. Add a pinch of salt and pepper on top of the veggies. Top with second slice of bread, and eat. If packing this in a lunchbox, I recommend wrapping it rightly to prevent the avocado from browning, or even squeezing a little lemon juice onto the avocado for the same reason.
