Chocolate Peanut Butter Energy Balls (Vegan/Gluten-Free/Refined Sugar Free)

A quick, easy, nutritious snack loaded with chocolate and peanut butter.
Time 5 minutes

Ingredients
  

  • 1 cup creamy all-natural peanut butter (the kind that's just peanuts and salt)
  • 1/4 cup honey maple syrup, or agave
  • 1 teaspoon vanilla
  • 1 cup oats
  • 1/4 cup cocoa powder
  • 1/4 cup chopped dark chocolate or mini chocolate chips optional, but delicious
  • A pinch of salt

Instructions
 

  • 1. Add all ingredients to a mixing bowl, and stir with a wooden spoon until fully combined.
  • 2. Using a mini-ice cream scoop, a tablespoon, or your hands, portion out the dough into 18 equal pieces. Roll between the palms of your hands to form smooth balls.
  • 3. These can be kept at room temperature for up to 3 days, but will last in the fridge for over a week.

Notes

Make sure to choose gluten-free oats if feeding these to people with an allergy. To keep these fully vegan, use maple syrup or agave.
