Chocolate Peanut Butter Energy Balls (Vegan/Gluten-Free/Refined Sugar Free)

A quick, easy, nutritious snack loaded with chocolate and peanut butter.
- 1 cup creamy all-natural peanut butter (the kind that's just peanuts and salt)
- 1/4 cup honey maple syrup, or agave
- 1 teaspoon vanilla
- 1 cup oats
- 1/4 cup cocoa powder
- 1/4 cup chopped dark chocolate or mini chocolate chips optional, but delicious
- A pinch of salt
1. Add all ingredients to a mixing bowl, and stir with a wooden spoon until fully combined.
2. Using a mini-ice cream scoop, a tablespoon, or your hands, portion out the dough into 18 equal pieces. Roll between the palms of your hands to form smooth balls.
3. These can be kept at room temperature for up to 3 days, but will last in the fridge for over a week.
Make sure to choose gluten-free oats if feeding these to people with an allergy. To keep these fully vegan, use maple syrup or agave.
