Christmas Morning Breakfast Pizza

My family has pizza for breakfast every Christmas. It's quick, easy, filling, and can be customized to please everyone in your family. Start with either scrambled or whole eggs, add cheese, veggies, and/or meats, and bake til golden and bubbly.

Ingredients
  

  • 1 batch of homemade pizza dough recipe linked above, or 1lb of store-bought pizza dough
  • 8 eggs
  • 1 cup shredded cheese Cheddar, Colby-jack, Swiss, Parmesan-whatever you love with eggs
  • 1 cup of diced raw vegetables like onions peppers, broccoli, or leftover roasted vegetables like squash or sweet potatoes,
  • 1 cup of cooked chopped bacon sausage, or ham (optional)
  • A handful of chopped herbs or micro greens for topping
  • Salt & pepper to taste
  • A pinch of cornmeal for the pan

Instructions
 

  • 1. Preheat oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper and sprinkle with cornmeal (this prevents pizza dough from sticking).
  • 2. Roll out pizza dough on a floured countertop to desired thinness. Transfer to prepared pan and bake on the lowest oven rack for 5-8 minutes, or until just barely cooked and starting to puff up.
  • 3. If you want a scrambled egg pizza, scramble all 8 eggs with a splash of water and a pinch of salt and pepper over medium heat until just barely cooked. Eggs should still be wet and a little runny. Otherwise, crack eggs onto par-baked pizza dough, top with cheese, veggies, and meats, and a sprinkle of salt and pepper.
  • 4. Put pizza back in the oven for 10-15 minutes, or until golden brown and bubbly. For runny yolks, keep an eye on the pizza at the 10 minute mark. For completely cooked yolks, bake for a full 15.
  • 5. Remove pizza from oven and let cool for a few minutes. Then, slice into 6-8 pieces and serve. Breakfast pizza is best eaten on the day it's made, as eggs don't reheat well without drying out.

Notes

I double this recipe for Christmas and make one pizza with scrambled eggs and one with whole eggs, as shown in the pictures above. Two of these pizzas easily feeds my family of 8-10 on Christmas morning, with a few slices leftover.
