Banana Oat Blender Pancakes

An updated twist on the 2-ingredient banana + egg pancakes, that adds oats, almond butter, cinnamon, and vanilla for better flavor and texture.

Ingredients
  

  • 2 large ripe bananas*
  • 2 eggs
  • 2/3 cup oats
  • 2 Tablespoons almond butter
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
 

  • 1. Put all ingredients into a blender or food processor, and blend until smooth. Let sit while you preheat a skillet to medium-low heat.
  • 2. Grease skillet with butter or oil. I used a 1/4 cup measuring cup to yield 6 total pancakes. Cook for 1-2 minutes per side, or until golden brown. Keep an eye on them, as they will burn more quickly than traditional pancakes.

Notes

*Fully yellow bananas with small brown spots are best for this recipe, as they lend sweetness to the pancakes.
