**AUGUST 2019 UPDATE**

This recipe was originally posted in May of 2016, and is still one of my all-time favorite dips. It was in desperate need of new photos and less wordy recipe instructions, so I’m re-posting it today. I’ve left the original blog post in tact below, for the sake of nostalgia. Feel free to scroll straight to the bottom to get the recipe, if you’ve already read this old blog post!

Lemon + Olive Oil Feta Dip

Is there such a thing as coincidence? Or is everything we do a product of the world happening around us?

I’m asking, because my classes just started their Ancient Greece unit, and all I want is cheese, wine, olives and fruit.

Bring on the feta, Kalamata olives, lemon, and fresh herbs….I’ll take a weekend on the Mediterranean coast, too, while you’re at it

Oh, sorry, you aren’t offering all-expenses-paid trips to the aegean right now? Well, I guess I’ll just make myself a greek-inspired snack, instead.

Lemon + Olive Oil Feta Dip

The best part? This dip literally takes 5 minutes to make, as everything simply gets mashed in a bowl with a fork until it reaches your preferred consistency. I like to leave a little bit of chunky feta action in there because I’m 100% obsessed with the stuff, but feel free to make this as creamy as you’d like- likewise, you could toss everything into a mini food processor if you want this dip to be silky smooth.

Whatever you do, you seriously need this Lemon + Olive Oil Feta Dip in your life. It’s seriously just so good.

Lemon + Olive Oil Feta Dip

Time: 5 minutes
Yields: 1 1/2 cups

Ingredients:

  • 8oz feta cheese
  • 1/4 cup plain Greek yogurt
  • 2 Tablespoons extra virgin olive oil, plus more to top
  • Juice and zest from half a lemon
  • 1 small garlic clove, pressed or grated on a microplane
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Crumble feta into a bowl, and top with all remaining ingredients. Use a fork to mash/mix everything well, stopping when the dip has reached your desired level of creaminess (I like to leave it pretty chunky!).
  2. Taste and add more salt, if needed. Since feta cheese varies widely in how salty it is, you may need several extra pinches or none at all!
  3. Transfer dip to a serving bowl and top with an extra drizzle of olive oil. Serve immediately, or store in a container in the fridge for up to 5 days.
