Place all ingredients into a small mixing bowl and stir well to combine
Use a small cookie scoop or a very heaping tablespoon to equally portion out the dough into balls. Roll each ball between the palms of your hands for a more smooth, uniform appearance.
Place balls in an airtight container and store in the fridge for up to 1 week.
Notes
To make your own oat flour: pulse 3/4 cup of rolled oats in a blender of food processor until fine and powdery. Measure out 1/2 cup to use for this recipe.
