Sweet + Spicy Maple Cinnamon Roasted Carrots

A simple roasted carrot recipe packed with big flavor! They're a little spicy, a little sweet, and full of warm spices. Switch it up with sweet potatoes, golden beets, parsnips, etc, instead of carrots!

Ingredients
  

  • 2 pounds carrots
  • 2 Tablespoons olive oil
  • 2 Tablespoons maple syrup
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cinnamon

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit.
  • Cut the tops off the carrots, then slice diagonally into 1-inch pieces.
  • Pile sliced carrots onto a sheet pan, add all remaining ingredients, and stir to combine.
  • Spread carrots out in an even layer on the pan, and bake for 30-35 minutes, or until tender. Halfway through baking (about 15 minutes in) stir/flip the carrots to ensure even baking.
  • Serve immediately. Store leftovers in the fridge for up to 5 days; reheat before serving.
