5 Healthy Cozy Winter Dinner Recipes

This week, instead of showing you another meal prep session that looks essentially the same as my previous meal prep post, I’m sharing 5 of my favorite quick, easy, hearty dinners. I’m also going to imagine I’m grocery shopping for just these five meals and write up a grocery list for you, too. Yes, this is enjoyable for me; I know I’m bizarre. 

Also, as a little aside, since people ask: all of these meals are meatless, and I love them oh-so very much. My husband eats meat and will gladly add some shredded rotisserie chicken or other cooked meat of choice in these recipes, too. Adjust them as you see fit to please your family.

To make all 5 of these recipes (which yield enough for 4 people each, btw) you’ll need:Healthy Weeknight Meal Grocery List

On this list I didn’t include any of the spices you’d need to make these recipes, since I’m assuming you likely have most of them in your pantry already. If your pantry is in need of a restock, you’d need: salt, pepper, garlic powder, paprika, curry powder, turmeric, cumin, chili powder, and olive oil to make these recipes. Buying a jar of each of these spices will definitely increase the cost of your grocery bill by a noticeable amount, but you will get dozens of uses out of each jar.
