Coconut Matcha Granola

If you’re beginning to wonder when I’ll stop posting new versions of my favorite granola, banana bread, and snack balls, the answer is never. Never ever. The fact that I haven’t shared a peanut butter granola recipe with you yet is frankly a problem, but don’t worry, its on the list. image

imageThis granola is special, though. It has a bold, earthy green tea flavor that is enveloped in coconut goodness in the form of coconut oil and coconut flakes. The strong flavor of matcha is tempered with maple syrup and ground ginger, and is a welcome change in my regular granola routine. image

imageLet’s talk matcha. Matcha is, in its most simple form, just ground up green tea leaves. It’s revered in Japan as a traditional, ceremonial drink. It’s also admired in the health food community for its high level of antioxidants (10x more than a cup of green tea!!), and it’s metabolism boosting properties. Matcha is also rich in chlorophyll, fiber, vitamins, and minerals. You may be used to matcha served as a latté, but it can be used in all sorts of snacks and desserts, too. Matcha has a very strong flavor, and should be used in small quantities. Just 1 Tablespoon is enough to coat this granola in it’s bold tea flavor. This means a $10 bag of matcha is going to last you a very long time. I keep mine in the freezer for extended shelf life, and have been using the same bag for months.

Coconut Matcha Granola

This simple, vegan, gluten-free granola gets an earthy dose of green tea flavor from matcha. Coconut oil and coconut flakes both add rich flavor and texture to this granola!

Time 30 minutes
Servings 8

Ingredients
  

  • 2 cups oats
  • 1 cup unsweetened coconut flakes
  • 1 Tablespoon matcha
  • 1 teaspoon ginger
  • 1/3 cup maple syrup
  • 1/3 cup virgin coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

  • 1. Preheat oven to 325 degrees Fahrenheit. Line a sheet pan with parchment paper, and set aside.
  • 2. Combine all ingredients in a bowl, and stir to combine. Pour onto prepared pan, and bake for 25 minutes, or until golden brown. Do not stir.
  • 3. Let granola cool completely, then use a spatula or your hands to break the granola up into clusters. Transfer to an airtight container, and store at room temperature for up to a week.
