Today we’re making one of my favorite holiday treats: truffles!

But not just any truffles…CBD infused truffles.

Yes, that’s right- we’re adding my absolute favorite herbal medicine to a silky-smooth chocolate treat. 

And these babies are extra special because they’re made with just two base ingredients: dark chocolate and almond butter.

Somehow, by simple melting together chocolate and almond butter, we get a thick, fudgy, absolutely luscious truffle that’s every bit as satisfying as truffles made with heavy cream, and can be kept at room temperature without fear of spoiling. 

Once the chocolate and almond butter melt together (with a tiny pinch of salt to balance out the flavors), we stir in 1 Tablespoon of Luce Farm’s Hemp-Infused Coconut Oil; this small amount keeps these truffles affordable, and is intentionally low so you can consume multiple at a time (because, who just eats one truffle?). The jar of hemp-infused coconut oil used to make these truffles is $60 and has 50 10mg servings of CBD per jar; we’re using 1 Tablespoon, or 12 servings, which works out to about $10 worth of CBD in the entire batch of truffles. So, it’s really not an expensive addition to these truffles at all, which I love.

Once the truffle mixture hardens, it simply gets scooped into balls (I love using this small cookie scoop to portion them all evenly), rolled into cocoa powder, and you’re done.

These would make the perfect addition to any holiday celebration you’re attending, but I especially love the idea of boxing them up into tiny packages (5-6 can also stack nicely in a half pint mason jar) and gifting to friends this holiday season. If you’re new to CBD, here are some things you should know (though I’ve talked more about it here and here, if you want more details):

  • CBD is a health-promoting compound found in the cannabis plant that is neither psychoactive nor intoxicating.
  • CBD is legal in all 50 states. Yep, really.  
  • CBD is great for helping your body manage: stress, anxiety, sleep, pain, inflammation, etc. 
  • CBD does not get you high (see non-intoxicating, above) and, based on the research I’ve done, is safe for just about everyone to consume, even children .

But, much like all ‘trendy’ wellness products that come with a high price point, there are lots of companies cutting corners and selling low quality CBD in order to create a huge profit margin for their businesses.

Ingredients
  

  • 1 1/2 cups dark chocolate chips
  • 3/4 cup creamy almond butter
  • 1/4 teaspoon sea salt
  • 1 Tablespoon Luce Farm Hemp-Infused Coconut Oil
  • 1/2 cup cocoa powder

Instructions
 

  • Pour chocolate chips and almond butter into a small pot and place on the stove over the lowest heat possible. Stir constantly, turning off the heat as soon as about half the chocolate is melted- the rest will continue to melt from the heat of the pot. Once all the chocolate is melted, add salt and hemp-infused coconut oil, stirring until completely smooth.
  • Allow the chocolate mixture to harden by either: placing the pot directly into the fridge for about 90 minutes, pouring into a shallow bowl and placing in the fridge for about 60 minutes, or letting sit at room temperature for 2-3 hours. Alternately, this mixture can be made up to a week in advance of rolling into truffles: simply store in the fridge and allow to sit at room temperature for about 20 minutes before scooping.
  • When chocolate mixture is firm enough to scoop, use a small cookie scoop or a heaping tablespoon to portion truffles into balls. Gently roll between the palms of your hands to help smooth them out, then pour the cocoa powder into a small bowl and roll each truffle in cocoa.
  • These truffles have the silkiest texture when stored at room temperature (up to 1 week), though will last for up to a month in the fridge. If chilled, remove truffles 15 minutes before serving to allow them to soften up. These truffles will absorb most of the cocoa powder after about 1 day of sitting, but can always be re-rolled in cocoa before serving, to make them look pretty again!

Notes

Any chocolate you love, chopped into small pieces and measured after chopping, will work here. 1 10oz bag of chocolate chips yields 1 1/2 cups + 1 Tablespoon, just FYI.
All-natural almond butter (made without any added oil or sugar) works best in this recipe. If using unsalted almond butter, increase the sea salt in the recipe to a heaping 1/4 teaspoon.
