Lets make green juice!

Except, minus the fancy expensive juicer or $10 a cup price tag at the local juice joint.

Instead, we’re relying on my favorite kitchen appliance (the blender!) and simple, inexpensive organic produce to get the job done.

My favorite green juice ingredients:

Kale. Curly, Tuscan, Red Leaf- whatever is on sale and looking fresh. It all tastes just about the same when juiced, and makes the juice nice and bright green.

Celery. This adds lots of liquid and extra fresh, green flavor and color to the juice.

Lemon. For a little bit of brightness and acidity. Any other citrus is delicious here, too!

Ginger. For a tiny bit of spice and to help with digestion. Also, I find that green juice can be overpoweringly green tasting without a little ginger to balance it out.

Apple. To add a little bit of sweetness to this green situation. I use a half an apple (and either save the rest for the next juice or just snack on it!) and it’s the perfect level of sweetness for me; feel free to use the whole thing if you like it sweeter!

That’s it! I like to keep it super simple and enjoy this fresh, bright juice as is. You could certainly mix it up with your favorite green juice add-ins like cucumber, romaine, oranges, other greens like collards or chard, etc etc.

The green juice is your oyster!

How to make green juice without a juicer:

Once all your produce is prepped and ready, just pop it into your blender, pour over some water, and blend until the consistency of a thick smoothie.

Then, pour through a fine mesh strainer into a bowl or jar, pressing with a spoon to get aaaaalll the liquid out, then add a few ice cubes if you’d like, and drink!

The leftover pulp can just be composted, stirred into pancake batter or oatmeal, or if you’re feeling super motivated to use up all that goodness, save up a few days’ worth of pulp and try using it to bake muffins like in this recipe!

Easy Homemade Green Juice [Made in a Blender!]

Time: 10 minutes
Serves: 1

Ingredients:

  • 2 large leaves of kale
  • 1 large stalk celery
  • 1/2 an apple
  • 1/2 a lemon
  • 1-inch piece of ginger
  • 1 cup cold water

Instructions:

  1. Remove the kale leaves from their stems. Cut the celery into 3-4 pieces. Remove the core from the apple and cut in 2-3 pieces. Cut the peel away from the lemon leaving just the flesh behind.
  2. Place all of your prepped veg/fruit in the blender with the ginger and water, and blend until smooth.
  3. Place a fine mesh strainer over a bowl or large jar, and pour the mixture through. Press/stir with a spoon to get as much liquid out of the pulp as possible.
  4. Pour juice into a glass, add a few ice cubes if you like it cold, and drink!
