Pretty Pink Smoothie Bowl

Lets make a bright pink smoothie that tastes like ice cream but is secretly full of veggies… and eat it for breakfast.

Green smoothies usually get all the attention in the veggie-loaded smoothie department, and I get it: we could all use some more greens in our life, and they’re an easy way to pack a few big handfuls of spinach or kale into a smoothie that otherwise just tastes like banana and mango.

While I’m usually all about the green, there are other fun ways to add veggies into your smoothie that doesn’t result in a bright green drink.

Like today, when we’re making a pretty pink smoothie full of berries and banana that also happens to have a few sneaky veggies thrown in the mix, like red bell pepper and cauliflower.

Yes, you’re reading this correctly: we’re putting CAULIFLOWER and PEPPERS into a smoothie with banana and strawberries.

Don’t look at me like that.

The cauliflower adds zero flavor to the mix, and since it’s white, it doesn’t alter the pink color of the strawberries at all.

Red bell pepper is totally a game changer in the smoothie department because it’s naturally sweet, loaded with nutrients, and helps add an extra pop of red to the mix.

We’re also adding a spoonful of hemp seeds to the blender because they’re a great plant-based protein option that I almost always add into my smoothies; feel free to use your favorite protein powder, a spoonful of nut butter, or skip it entirely, if you’re looking to keep this completely nut/seed free!

The best part about this smoothie? It legit has the consistency of soft serve ice cream, and makes sticky summer mornings so much more enjoyable.

If you happen to live with a picky eater (whether they’re a child OR adult…or maybe that picky eater is you!) who struggles to get a variety of veggies into their life, offering them a bowl of pink soft serve for breakfast might just be the way to get them interested in eating their veggies!

Pretty Pink Smoothie Bowl

Time: 5 minutes
Yields: 1 smoothie (about 16oz)

Ingredients:

  • 1 frozen banana
  • 1 cup frozen strawberries
  • 1/2 cup roughly chopped raw cauliflower
  • 1/2 of a red bell pepper, seeds and stem removed
  • 1/4 cup water or plant milk
  • 1 tablespoon hemp seeds

Instructions:

  1. Put all ingredients into a blender and blend on high until thick and creamy, about 1 minute. If needed, stop and scrape down the sides to help blend fully, or use the tamper attachment to help the ingredients mix, if your blender has one.
  2. Pour into a bowl and serve immediately.

SWITCH IT UP: use frozen raspberries instead of strawberries, swap out half of the banana for half a cup of mango, use a tablespoon of almond or cashew butter instead of the hemp seeds, add a scoop of your favorite protein powder, and any color bell pepper instead of red.
