A word that I didn’t know how to pronounce as a child. 

A fun breakfast food to eat hot or cold.

A great way to add more protein, fiber, and raw seeds into your life.

Oats, shredded coconut, dried fruit (I diced up some dried mango, but whatever you have will work), and looooots of seeds (I’m talking hemp, chia, pumpkin, and sunflower seeds) get scooped into a large jar, shaken vigorously, and tucked away in the pantry for future breakfast needs.

Then, when you’re ready to eat, you have a few options. You could:

  • stir with milk, yogurt, or both and let sit overnight to soften and achieve and thick, soft, chewy, creamy breakfast you’ll eat cold
  • sprinkle over a bowl of yogurt or applesauce like raw granola
  • pour into a bowl with hot water (think, the exact temperature of the Keurig in your office) and let sit for 5 minutes to soak/soften and top however you like to eat hot oatmeal
  • pour into a bowl with cold milk and banana slices and eat like cereal
  • stir into pancake batter for extra texture + crunch

This bircher muesli recipe is completely unsweetened, so you can add extra fruit, a drizzle of maple syrup, or your preferred sweetener of choice to your prepared muesli to make it perfectly sweet for your tastebuds. 

And, it goes without saying, but you are absolutely welcome to switch up any of the seeds in this mix to suit your tastebuds and the contents of your pantry and what’s available/affordable to you. I happened to have all of these ingredients in my pantry already, but if you currently have zero of the ingredients and don’t want to spend a ton of $$$$ at once, try hitting up the bulk bin at your local health food store and just get the amount you need of each.

Super Seedy Bircher Muesli

Yields: 4 1/2 cups/ 6-8 servings

Time: 5 minutes

Ingredients:

  • 1 1/2 cups quick or instant oats
  • 1/2 cup chia seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup hemp seeds
  • 1/2 cup pumpkin seeds (aka pepitas)
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup any dried fruit you like (larger fruits like mangos, apricots, dates, etc, should be diced to about raisin-size before using)

Instructions:

  1. Measure all ingredients into a large jar or container with a lid and shake to combine. 
  2. Eat any way you enjoy muesli: soaked overnight with milk or yogurt, cold with milk like cereal, mixed with almost boiling water to form hot oatmeal, sprinkled over yogurt or smoothie bowls, etc. I like the ratio of about 1/2-3/4 cup of muesli to about 3/4-1 cup of liquid. 
  3. Top with fruit, nut butter, and whatever sweetener you’d like: maple syrup, honey, etc. 
  4. Dry muesli keeps in the pantry for up to 1 month. Prepared muesli (i.e. soaked in the fridge) should be eaten within 4 days of preparing.

  1. Bircher muesli is the staple breakfast here in Switzerland. We make it with séré ( which is similar to Greek yogourt), muesli and shredded apples with a bit of honey to sweeten it. You make it the night before and let it sit in the fridge overnight. It’s such a nutritious and filling breakfast. Thanks for your recipe

      Thanks for sharing that! I love soaking my muesli overnight with yogurt and honey, and I’ve heard before that apple is traditional for bircher muesli…such a great combination! I hope you enjoy this extra seedy version!
