Vegan Golden Milk Latte

Say hello to the golden, frothy drink of my winter dreams.

Today is my 5th day in a row drinking one of these lattes, and given the sleet-freezing-rain-ice-snow situation going on outside right now, it looks like I’m going to be drinking this latte from now until March.

Do you have a morning routine or ritual? On weekdays I have a pretty standard routine to get myself ready and out the door, but my weekends are always different.

Most weekends I wake up before Kevin and find myself with anywhere from a few minutes to a few hours of alone time- time that I thoroughly enjoy and love, despite also wanting to spend every moment of the weekend with him.

I also really love the early morning when the world is calm. Some days I go out for a hike, ride the stationary bike in my living room, work on this here blog, or make an elaborate breakfast for us while Kevin sleeps.

Other days I just want a mug of something warm and frothy to sip on while I ponder the mysteries of the universe.

Vanilla Turmeric Latte

This latte was born from one of those mornings when I wanted to ease into my day and revel in the alone time.

The combination of coconut milk, vanilla, turmeric, ginger, cinnamon, black pepper, honey, and coconut oil makes this drink extra creamy, sweet, earthy, and satisfying to sip on.

Don’t let the black pepper freak you out: it just helps your body absorb the nutrients in the turmeric better, but doesn’t make this latte particularly peppery.

Vegan Golden Milk Latte

It also happens to be a super nourishing drink, full of anti-inflammatory and antioxidant power from the turmeric and ginger and heart-healthy fats from the coconut milk and coconut oil.

To make this powerhouse of a latte, all you need to do is warm the spices up in some milk, and then blend the hot liquid with coconut oil and honey. You could do this in a pot on the stove, or by microwaving your coconut milk until it’s hot and dumping everything straight into your blender. Either way, the end result is a thick, frothy, rich-tasting latte sure to kick the winter blues.

If you find yourself sipping on one of these lattes, let me know! Leave a comment below or take a picture of your steamy mug and tag me on Instagram. I can’t wait to see your lattes!

Servings 1

Ingredients

  • 1 1/2 cups 12oz canned coconut milk*
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cinnamon
  • a few grinds of fresh black pepper a small pinch
  • 1 Tablespoon coconut oil
  • 1/2-1 Tablespoon raw honey or maple syrup**

Instructions

  • 1. Warm coconut milk, vanilla and spices in a pot over medium heat (or in a microwave safe container for 1-2 minutes) until hot, but not boiling.
  • 2. Transfer hot liquid to a blender with coconut oil and honey, and blend until thick and frothy (about 20 seconds). Pour into a large mug and enjoy!

Notes

*Full-fat canned coconut milk yields the best tasting latte. Whole milk would also work well in this recipe.
**Use as much or as little honey as you like to make this sweet enough. I preferred it with a heaping 1/2 Tablespoon.
