February is such a tough month for a seasonal produce lover like myself. Sure, there are leftover cold-storage root vegetables like beets, carrots, and potatoes, a few slightly sad looking apples, and the last of the winter squash left at the farmer’s markets, but other than that, New England isn’t popping out a whole lot of veggies this time of year.

So, in these cold winter months, I lean into my pantry staples even more, buy lots of greens from the store to brighten up the last of the local roots + squashes, rely on frozen berries to get a little fruit action in my life, and focus on making hearty, warming, filling meals that leave me both nourished + satisfied, regardless of the fact that there isn’t a whole lot of variety in the produce department right now.

And, obviously, February is the month of looooove (or, at least the month that has Valentine’s Day in it…), so there are plenty of fun dessert options on the list too!
