A summer-inspired drink that's super fun and refreshing! Fresh blueberries, mint, and lime juice are puréed, strained, and stirred into sparkling wine.
1. Blend blueberries, mint, and lime juice in your blender or food processor until puréed. For a smoother drink, strain the purée through a fine mesh strainer.
2. Spoon about 2 tablespoons of purée into a champagne glass, add a few ice cubes, and top with Prosecco. Alternately, you could dump the entire thing into a pitcher. Garnish with a slice of lime and a sprig of mint, if desired.

*To make these non-alcoholic, sub equal parts of ginger beer and seltzer water for the wine.
