Blueberry, Mint & Lime Prosecco Spritzers

A summer-inspired drink that's super fun and refreshing! Fresh blueberries, mint, and lime juice are puréed, strained, and stirred into sparkling wine.

Ingredients
  

  • 1 pint blueberries
  • 6-8 large mint leaves a handful
  • Juice of 2 limes
  • 1 bottle of sparkling wine I used a dry Prosecco*
  • Ice cubes lime slices, and extra mint, for garnish

Instructions
 

  • 1. Blend blueberries, mint, and lime juice in your blender or food processor until puréed. For a smoother drink, strain the purée through a fine mesh strainer.
  • 2. Spoon about 2 tablespoons of purée into a champagne glass, add a few ice cubes, and top with Prosecco. Alternately, you could dump the entire thing into a pitcher. Garnish with a slice of lime and a sprig of mint, if desired.

Notes

*To make these non-alcoholic, sub equal parts of ginger beer and seltzer water for the wine.
