Blueberry, Mint & Lime Prosecco Spritzers

Picture this: It’s Friday afternoon on another 90+ degree day. You’ve just gone blueberry picking and have a mint plant that’s threatening to take over your entire kitchen. You’re prettymuch sweating just standing around, and are in desperate need of something cold, bubbly, and refreshing. Perhaps this isn’t exactly how your day has gone, but I’m guessing the too-hot-to-function part might be pretty universal right now. At least across most of the U.S.  Let me back up for a minute here and talk about alcohol. I’ve been waiting for the right moment to post an alcoholic recipe here, knowing I would invariably end up drinking whatever was leftover from the photo shoot. Considering I shoot most of my photos in the late morning/early afternoon, alcohol isn’t usually on the menu.  Blueberry, Mint & Lime Prosecco Spritzers

Blueberry, Mint & Lime Prosecco SpritzersI don’t drink very often, for a lot of reasons. One is that alcohol can be expensive, and I’m pretty particular about how I spend my hard-earned cash. Also, Kevin doesn’t drink, like ever (except for his newfound love for flip-cup, which is hilarious because he is the opposite of a frat boy). So, if I’m buying alcohol I have to either drink the entirety of the bottle or resign myself to pouring much of the excess down the drain. None of this sounds very good to me. It’s also important to mention that alcoholism runs in my family. Having lived through the heartbreaking, physically and emotionally damaging effects of addiction, I like to keep my distance from the stuff. Addiction isn’t glamorous, and it’s not like you see in the movies. Sometimes there’s a happy ending, but so often there isn’t. Blueberry, Mint & Lime Prosecco SpritzersNow that I’ve gotten you thoroughly depressed, lets go drink these amazing Prosecco spritzers! Seriously, these were great. Sweet, ripe berries get blended with lime juice and mint, and then doused in Prosecco. The end result is bubbly, not too sweet, and extra refreshing from the mint. I only made enough to fill a couple of glasses, but I can imagine this would make a gorgeous pitcher to share with friends, too. If you’re serving this to someone who is pregnant, underage, a recovering addict, or otherwise not interested in alcohol, I think it would still be delicious with equal parts ginger beer and seltzer instead of wine. I used a dry Prosecco, but any sparkling wine that you love should be great here, too. Blueberry, Mint & Lime Prosecco Spritzers

With minimal effort, you’ve got yourself a fancy, summer produce-inspired drink that’s just as pretty to look at as it is delicious. Despite their dark blue skin, the blueberries turn this drink a pale pink, which contrasts beautifully against the green of the lime and mint. Blueberry, Mint & Lime Prosecco Spritzers

A summer-inspired drink that's super fun and refreshing! Fresh blueberries, mint, and lime juice are puréed, strained, and stirred into sparkling wine.

Ingredients
  

  • 1 pint blueberries
  • 6-8 large mint leaves a handful
  • Juice of 2 limes
  • 1 bottle of sparkling wine I used a dry Prosecco*
  • Ice cubes lime slices, and extra mint, for garnish

Instructions
 

  • 1. Blend blueberries, mint, and lime juice in your blender or food processor until puréed. For a smoother drink, strain the purée through a fine mesh strainer.
  • 2. Spoon about 2 tablespoons of purée into a champagne glass, add a few ice cubes, and top with Prosecco. Alternately, you could dump the entire thing into a pitcher. Garnish with a slice of lime and a sprig of mint, if desired.

Notes

*To make these non-alcoholic, sub equal parts of ginger beer and seltzer water for the wine.
