There are a lot of recipes online that claim to be magical! life-changing! 2-ingredient! amazing! 

While some of them really are incredible, most leave something to be desired.

I’m looking at you, 2-ingredient “hacks” that are actually made of two items that each have a 20-something-long list of ingredients. Worse yet are the so-called life changing recipes that only change your life for the worse, since they are such a major disappointment.

The one internet sensation that I’ve always loved, though, is 1-ingredient banana ice cream. It really is a little bit magical because hard, icy frozen bananas become the most thick, luxurious, not-overly-banana-tasting soft serve in just a couple minutes.

And, if you still haven’t tried it, now’s the time to stock your freezer with ripe bananas and hop on the banana nice cream train! 

While the classic is great, there are lots of ways to enhance the natural beauty of this simple recipe. My favorite, easy addition is a splash of vanilla extract. You could also add:

a spoonful of peanut butter

cocoa powder

frozen strawberries (or any berry)

matcha powder or instant espresso. One-Ingredient Banana Ice Cream

If you’ve never tried 1-ingredient banana ice cream, you really have to. It comes out perfectly fluffy and creamy every time, and is the ideal vehicle for all your favorite toppings (sprinkles! peanut butter! chocolate sauce! granola!). I especially love a big bowl of it after a hike on a hot summer morning, or as a fun dinner alternative on really, really hot days when we can’t possibly imagine eating anything warm.

1-ingredient Banana Ice Cream

Soft, creamy, fluffy ice cream made with just frozen bananas!

Ingredients
  

  • Frozen Bananas 1-2 per person*
  • Optional: a splash of vanilla extract and a tiny pinch of salt. Other add-ins like a spoonful of peanut butter cocoa powder, matcha or espresso powder, or frozen berries.

Instructions
 

  • 1. Slice frozen bananas into 1-inch pieces, and put into the bowl of a food processor or high-speed blender. Blend until thick and creamy, about 3-4 minutes, scraping down the bowl once or twice to fully combine.If absolutely necessary, you can add a tiny splash of almond milk to help it blend up, if your machine is struggling. The texture is best, though, with no added liquid.
  • 2. Add in any optional ingredients, blend again just to combine, and serve immediately.

Notes

*Make sure you are using very ripe bananas. I usually wait for them to get spotty before peeling and freezing whole in freezer bags. Adjust the quantity of bananas to make more ice cream.
