They’re so easy to make, it feels like watching an infomercial for a ridiculously good deal and asking yourself what’s the catch? BUT THERE ISN’T ONE. 

Ready?

Pop the pits out of some medjool dates and chop them up. Pour tahini and honey into a bowl and stir them together. Add the dates, oats, flax, vanilla, cinnamon, and salt to the tahini mixture, stir to combine, scoop into balls, and eat! 

That’s it!

The best part? You can make them in 5 minutes, flat. 

Like, really. I timed myself to see if they can actually be made in 5 minutes, including the time it takes to pull out the ingredients from the cabinet, and they totally can.

They’re perfectly sweet, boldly tahini flavored, have the texture of cookie dough (!!) and are the ideal snack for literally anytime hunger strikes. I’ve even been known to grab several to take in the car with a cup of coffee for an easy breakfast on particularly busy mornings.

Oats and flax help bind them together and add a little fiber to the equation, and an entire cup of tahini ensures that these little balls of joy are pure tahini bliss in every bite.

Ingredients
  1. 1 cup tahini
  2. 1/4 cup raw honey
  3. 4 medjool dates
  4. 1/2 cup quick-cooking or instant oats*
  5. 1/4 cup flax seed meal (ground flax)
  6. 1 teaspoon vanilla extract
  7. 1 teaspoon cinnamon
  8. 1/2 teaspoon salt
Instructions
  1. 1. Remove pits from dates and finely dice them into about raisin-sized pieces.
  2. 2. Put tahini and honey into a small mixing bowl and stir well to combine. Add all remaining ingredients, including chopped dates, and stir to fully combine. Scoop into 18-20 small balls (I used a 2 Tablespoon-sized mini cookie scoop to get them all even) and roll between the palms of your hands to form compact balls.
  3. 3. Store in the fridge for up to 2 weeks, or the freezer for up to 1 month.
Notes
  1. *If you only have old-fashioned rolled oats, just place them into a food processor or blender and pulse 4-5 times to break them up a bit before using.
