Say hello to my new summer obsession: fudgesicles

They’re quick + easy to make, ultra cooling and refreshing on a hot day, and such a nostalgic treat. 

Lately we’ve been popping a few out of the freezer, walking down to the beach, and attempting to not drip melty fudgesicle all over ourselves while watching the sunset; it’s truly a magical summer experience that doesn’t get any less enjoyable the older I get.

These rich, creamy, chocolatey pops of joy are infused with the nutritional power of hemp thanks to a very special ingredient: CBD, in the form of Luce Farm’s Hemp-Infused Honey. I’ve talked about their incredible medicinal honey before, but here’s a quick recap if you’re new to CBD:

  • CBD (aka Cannabidiol) is made from the hemp plant and is completely legal in all 50 states. CBD Hemp-Infused Fudgesicles with 2-ingredient Magic Shell Vegan Paleo

To create these hemp-infused fudgesicles you’ll need five basic ingredients: 

A can of coconut milk

Luce Farm’s hemp-infused honey

Cocoa powder

Vanilla extract

and a pinch of salt

The ingredients get whisked together (or dumped in the blender and blended for literally 10 seconds) then poured into popsicle molds (<–affiliate link) and frozen until solid. 

Then, once your fudgesicles are nice and firm, you’ll melt some dark chocolate with coconut oil to form an easy homemade magic shell that instantly hardens on your pops, and dunk each one until fully coated. I used two bars of my favorite fair trade + organic dark chocolate (<–affiliate link), but you could also use my homemade chocolate sauce recipe, using all coconut oil and no water to make your own magic shell with cocoa powder! 

The end result is a sweet, slightly herbal fudgesicle that’s perfectly creamy and chocolatey. The layer of chocolate on the outside isn’t entirely necessary, but adds another layer of fun and a little bit of texture to these silky smooth frozen treats. I love biting into them once they’ve slightly softened, and the crisp chocolate breaks off into your mouth with a bite of melty fudgesicle…so good!

Ingredients
  1. 1 14-oz can full-fat coconut milk*
  2. 1/4 cup Luce Farm Hemp-Infused Honey
  3. 1/4 cup cocoa powder
  4. 2 teaspoons vanilla extract
  5. a pinch of salt
Chocolate Magic Shell
  1. 2 3-oz bars of your favorite dark chocolate (or 1 cup chocolate chips)
  2. 2 Tablespoons virgin coconut oil
Instructions
  1. 1. Put all fudgesicle ingredients into a mixing bowl and whisk until no lumps of cocoa remain (alternately, dump all ingredients into your blender and blend for about 10 seconds).
  2. 2. Pour into popsicle molds (or even small paper cups, or a muffin tin with paper liners, if you don't own a popsicle mold), insert sticks, and freeze until solid (about 4 hours).
  3. 3. Once popsicles are solid, break chocolate bars into pieces and put into a microwave-safe bowl or glass measuring cup with coconut oil. Microwave in 20 second increments, stopping to stir in-between, until melted. Mine took about 1 minute, total, to melt. (alternately, this can be done on the stovetop in a double boiler if you don't have a microwave)
  4. 4. Pour chocolate into a cup or jar about the size of your popsicles (I used a small half pint/8oz mason jar) and grab a plate that will fit your popsicles on it once they're dipped in chocolate.
  5. 5. Dunk each popsicle into the chocolate. If needed, use a spoon to coax some of the chocolate up to fully coat the pops. Put popsicles onto the plate, then transfer back into the freezer to keep frozen until you're ready to eat. Since the chocolate coating hardens immediately, you can eat these right away, if you'd like.
Notes
  1. *Be sure to use full-fat coconut milk, as it provides the creamy texture for the fudgesicles. If you'd like to make these with dairy, 1 3/4 cups of half + half or light cream would be a great swap.
  2. Depending on the volume of your popsicle molds, this recipe will yield anywhere from 4-6 popsicles.
  3. Vegan friends: if you don't eat honey, these fudgesicles taste great with maple syrup in place of it, and Luce Farm's hemp-infused coconut oil can be used in the chocolate coating instead of the filling!

    1. Thanks Meaghan. I know it’s an investment but I think it is SO worth it! Not only does it taste amazing, but it’s sustainably made on a small family farm and has major health benefits! Other than this recipe, which uses 1/4 cup, you’ll really only ever use 1 teaspoon or less at a time for a daily ‘dose’, so the jar lasts quite a while!
