13 Make-Ahead Breakfasts for Busy Mornings

Apparently there are still people out there who think they don’t have time to eat breakfast, or that drive-through breakfast is cheaper and easier than anything they could make at home. I get that mornings can be hectic; most days I’m scrambling to get out the door on time, since I have a job I truly can’t be late for (#teacherlife). What I don’t understand is why breakfast isn’t a priority, or why anyone would willingly choose to eat a Mc-anything, or worse yet, nothing at all, for breakfast.

So, I’m here to give you a little nudge. A friendly reminder, if you will, that you are fully capable and qualified to make yourself a delicious, nourishing, fill-you-up-until-lunch, quick, easy breakfast before work in the morning. All you need to do is plan ahead, even just a little bit. You could make a big batch of breakfast on Sunday to eat all week, or you could put together your breakfast after dinner each night; just pull it out of the fridge as you walk out the door the next morning. Planning ahead is really the way to go. Trust me, your future self will thank you.

Here are 13 ideas for easy, make-ahead, don’t have to use much time or brainpower breakfasts.

  1. Homemade yogurt. I make yogurt every week, so it’s an easy staple in my house. It can take up to 12 hours to culture, but there’s no work involved. You could even buy a big tub of your favorite yogurt to portion out in reusable containers with fruit, nuts, and granola layered in for homemade yogurt parfaits.Homemade Yogurt
  2.  Basic Granola is great on yogurt, with whatever milk you love, or even dry with a piece of fruit.Basic Maple Olive Oil Granola
  3. Coconut Matcha Granola is another winner, with a little jolt of caffeine too!Coconut Matcha Granola
  4. Dark Chocolate Hazelnut Granola is essentially like eating dessert for breakfast. But healthy. Dark Chocolate Hazelnut Granola
  5. Whole Wheat Banana Bread can easily be made on Sunday and cut into thick slices for breakfast. I’d need something extra on the side to fill me up, or just a BIG slice. whole wheat banana bread
  6. Whole Wheat Date & Carrot Spice muffins are great with a big slather of peanut butter, and two usually fill me up.whole wheat carrot and date spice muffins
  7. Blueberry Muffins. It doesn’t get more breakfast-y than this. (Maybe with a green smoothie on the side?)Whole Wheat Blueberry Muffins
  8. Banana Chia Pudding is already a make-ahead recipe. Stir up a big batch for breakfasts all week.Banana chia pudding
  9. Tahini & Date Overnight Oats are the warm weather/lazy solution to oatmeal. No heating or fussing required. Tahini & Date Overnight Oats
  10. Strawberry Breakfast Bars still taste great on day 5, and are just as good crumbled into yogurt as they are on their own.Strawberry Oatmeal Breakfast Bars
  11. Apple Pie Oatmeal. I ate this for breakfast all last week. Double the recipe, portion it out into 12-oz mason jars, top with an extra splash of apple cider, and just microwave the jar for a minute in the morning. Apple Pie Oatmeal
  12. Sweet Potato and Kale Fritatta is great cold, but could be quickly reheated in the microwave and sandwiched between two slices of toasted bread for an easy breakfast sandwich. Sweet Potato and Kale Fritatta
  13. Fluffy Whole Wheat Pancakes aren’t just for the weekend. Cook up a batch on Sunday night and store leftovers in the fridge or freezer. Reheat them in the toaster and eat them plain or, my personal favorite, sandwiched with peanut butter and banana slices. Fluffy Whole Wheat Pancakes
