Shhh, don’t tell anyone: my favorite kind of pizza is breakfast pizza. My family eats it every Christmas morning, and it just doesn’t feel like Christmas without it. We’ve been doing this whole breakfast pizza thing in my family for so long that I can’t even remember what my life was like before breakfast pizza. I’m trying really hard to think of life before breakfast pizza (BBP) but I just can’t. What did we do on Christmas morning BBP? Was my life utterly meaningless and void of Christmas spirit? Does your family have a special Christmas morning tradition? Strangely enough, ours is breakfast pizza, and I’m the one who started it. I’ve been making breakfast pizza for my family on Christmas morning since I was in high school. I’m not entirely sure what first compelled me to make it, other than my lifelong love for pizza and desire to feed my family. As soon as the presents are all opened, I start getting the look. The one that says, “are you making the pizzas now, or what?”. The Christmas tunes get turned up, pizza dough is rolled out, and everything comes together in the slow, relaxing minutes of Christmas morning. The cooked pizzas come out of the oven, get sliced, and everyone digs in. Despite the otherwise raucous nature of my family members, breakfast pizza is eaten in near silence; that’s how much we love it.Christmas Morning Breakfast Pizza

Christmas Morning Breakfast PizzaAt this point everyone knows what to expect Christmas morning: two pizzas, one covered with scrambled eggs, the other with whole eggs. Both with a variety of toppings like cheese, onions, peppers, broccoli, bacon, or sausage. Last year I made one with kale and roasted butternut squash that was to.die.for. If its not too late, you should add breakfast pizza to your family’s plans this weekend. It’s filling, customizable, and just plain fun. I make my life a little easier by preparing all the ingredients a day or two ahead: I make the pizza dough (or buy it from Whole Foods or Trader Joe’s when I’m in a rush!), dice the veggies, cook the bacon and/or sausage, and make sure there is plenty of cheese and eggs in the house.Christmas Morning Breakfast Pizza

We tend to stick with the basics, but you could use whatever veggies, meats, and cheeses your family loves for breakfast. You could even roll out the dough into personal-sized pizzas and let everyone build their own breakfast pizzas for a Christmas morning pizza party. That’s what I did for these pictures, since I didn’t have any use for two full-sized breakfast pizzas laying around a few days before Christmas. Come to think of it, breakfast pizza parties might be the best weekend brunch idea ever!  Why have I never hosted a pizza party for brunch before? I need to remedy that ASAP.

I hope your family loves breakfast pizza as much as we do. At its essence this is basically bread and eggs for breakfast- nothing special- yet it’s my most beloved Christmas tradition. Sometimes all it takes is a little pizza to bring everyone together for the holidays.

Christmas Morning Breakfast Pizza

My family has pizza for breakfast every Christmas. It's quick, easy, filling, and can be customized to please everyone in your family. Start with either scrambled or whole eggs, add cheese, veggies, and/or meats, and bake til golden and bubbly.
Servings 6

Ingredients
  

  • 1 batch of homemade pizza dough recipe linked above, or 1lb of store-bought pizza dough
  • 8 eggs
  • 1 cup shredded cheese Cheddar, Colby-jack, Swiss, Parmesan-whatever you love with eggs
  • 1 cup of diced raw vegetables like onions peppers, broccoli, or leftover roasted vegetables like squash or sweet potatoes,
  • 1 cup of cooked chopped bacon sausage, or ham (optional)
  • A handful of chopped herbs or micro greens for topping
  • Salt & pepper to taste
  • A pinch of cornmeal for the pan

Instructions
 

  • 1. Preheat oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper and sprinkle with cornmeal (this prevents pizza dough from sticking).
  • 2. Roll out pizza dough on a floured countertop to desired thinness. Transfer to prepared pan and bake on the lowest oven rack for 5-8 minutes, or until just barely cooked and starting to puff up.
  • 3. If you want a scrambled egg pizza, scramble all 8 eggs with a splash of water and a pinch of salt and pepper over medium heat until just barely cooked. Eggs should still be wet and a little runny. Otherwise, crack eggs onto par-baked pizza dough, top with cheese, veggies, and meats, and a sprinkle of salt and pepper.
  • 4. Put pizza back in the oven for 10-15 minutes, or until golden brown and bubbly. For runny yolks, keep an eye on the pizza at the 10 minute mark. For completely cooked yolks, bake for a full 15.
  • 5. Remove pizza from oven and let cool for a few minutes. Then, slice into 6-8 pieces and serve. Breakfast pizza is best eaten on the day it's made, as eggs don't reheat well without drying out.

Notes

I double this recipe for Christmas and make one pizza with scrambled eggs and one with whole eggs, as shown in the pictures above. Two of these pizzas easily feeds my family of 8-10 on Christmas morning, with a few slices leftover.
